When people hear I make chocolate often they ask if I have a chocolate river. The image of a portly Austrian boy getting sucked up a tube of molten chocolate is pretty well imprinted in the minds of the average visitor here. For the record, I like the chocolate river in the newer Johny Depp version better. The chocolate in the early version is like chocolate water and the later version is much more like liquid chocolate.
Azan and I had the chance to watch both movies back-to-back and both of us liked the earlier version better overall. Azan keeps sining Umpa, Umpa...as he play around the house. I like the fact that the original version shows the actual process for making chocolate from bean-to-bar (more or less). It actually shows the beans being poured from the bag and shows nibs being turned into liquid chocolate.
Back to the chocolate river though. Chocolate mixed by waterfall would be very good. This is basically doing the same thing as conching the chocolate. The oxygen in the air breaks down the astringent properties in the cocoa making a less bitter and dry taste. So Wonka's waterfall mixed chocolate is not to bad an idea!
