Why has chocolate only been produced in 1st world countries? According to John Scharffenberger one of the most prominent players in the chocolate world today, it was purely geo-technological. The ancient world of chocolate was focused on cocoa as a drink...not until the Swiss invented solid chocolate candy, did the world EAT chocolate. They always DRANK it before!
Since cacao comes exclusively from tropical climates (20 degrees north and south of the equator) and cold temperatures are required to make chocolate solid, it was impossible to make solid chocolate at the farm.
Today however, we have refrigeration and now chocolate can be and will be made at the farm! Thanks to modern technology farmers can now make their own high quality chocolate that will be even better due to advancements in understanding of the whole process. Farmers who make chocolate will make the best chocolate because they will understand the end results more readily through immediate feedback.
