Oh no...you got peanut butter in my chocolate....
You know what I mean. So, the other day I am making chocolate and as soon as it begins to grind in the wet grinder, I begin to notice an off aroma. This was cacao from a new producer and I wondered why it had such a different aroma. Once the chocolate was finished I was ready to throw it all away since I figured it was too off flavored to use as any of our current chocolates.
Before doing so, I gave some to my wife Jeanne. After tasting it and saying it tastes fine, I looked at her like she was crazy. Had my tastes become so narrow that I couldn't accept this "different" chocolate? She recommended I share it with a few people first because she actually liked this “off” flavor in the chocolate. So, reluctantly I shared it with some guests who were on the Chocolate Forest Experience. I was surprised to hear their responses to this “throwaway” chocolate.
“Very interesting....it's smoky!”......“It tastes like grilled meat!”.....”Yeah, you should try it with bacon!”
What had happened to this cacao to make it so different? I tried the second sack from the same producer and discovered none of the same “smokiness”. I haven't talked to the producer yet, but I suspect they used a fire to help dry the cacao after fermentation. The smokiness is coming from this process!
Funny thing is....I had actually planned on testing this technique with some coffee wood to give the chocolate a smoky aroma! Sure enough, we added some baco-bits and a touch of brown sugar and BAM!
