Recently we have started a beautiful project with Talamanca Organica a small cacao producer who is leading the way in producing cacao for the bean-to-bar local chocolate maker.
One of our goals at Caribeans is to create a locally produced chocolate that highlights the best cacao produced in our neighborhood. Christina Orr is a great example for those looking for passion in quality and excellence. She really loves her cacao! It is almost as if she has given names to each of her beans.
From the care of her trees to the fermenting and drying of the cacao, she is giving love and care. We haven't made chocolate yet from these beans but soon we will try to continue that love and nurture to make an amazing chocolate!
It will be through the cooperation and community of chocolate makers and cacao producers that Talamanca, Limon Costa Rica will be known as the "Napa Valley of Chocolate"!
Our goal is to have the first batch ready for Saturday February 25th, 2012!
